Pineapple & Pancakes
Warm and fluffy, lightly flavored with maple syrup. The first sip of
juice with, the first bite of pancake: they marry perfectly.
Ingredients for 10 pancakes
For the dough
250 g flour
2 to 3 tablespoons of sugar
2 teaspoons baking powder
1 pinch of salt
2 eggs
200 ml milk
A little oil
Maple syrup for garnish
Some berries for garnish
Preparation
Mix the flour with the sugar, baking powder, and salt. Add the eggs and
milk and mix until smooth. Put some oil in a frying pan, and heat it
over medium heat. Pour in 2 tablespoons of the batter. The pancakes
should be about 4 inches in diameter.
Cook each pancake for about 2
minutes until small bubbles form, turn it over, and cook the other side
at the same time. Garnish the pancakes with berries and maple syrup and
serve.
